Amaranthus Eatery
We envisioned Amaranthus as a celebration of plant-based cuisine that would feel both sophisticated and approachable. When conceptualizing this space, we drew inspiration from European farm-to-table dining experiences—those intimate eateries tucked away in the countryside where the connection between food and environment feels seamless and authentic. Our challenge was to create an interior that would complement the restaurant’s commitment to thoughtful, plant-forward cuisine while establishing a distinct sense of place within New Westminster’s dining scene.
The design narrative centers around contrasting elements that create visual harmony—industrial concrete floors paired with crisp white panelling, natural wood accents against hexagonal tile backsplashes, and delicate dried herbs suspended from rustic wooden structures. We deliberately incorporated a marble counter with clean lines to elevate the casual atmosphere, while vintage-inspired crossback chairs and simple round tables maintain an unfussy, welcoming appeal. The soft blue botanical cushions add gentle color that echoes the restaurant’s plant-centric ethos, creating subtle visual connections throughout the space.
What truly makes Amaranthus special is how the design elements work together to create a multisensory dining experience. The open kitchen concept allows guests to witness the culinary artistry, while the dried herbs hanging above not only serve as a beautiful visual element but also infuse the space with subtle fragrance. The transparency between production and consumption reflects the restaurant’s honest approach to food. Every design decision was made to support rather than overshadow the culinary experience—creating a backdrop that feels at once familiar and special, like discovering a hidden gem in the back streets of Provence that you can’t wait to return to.
